Masala Corn Chaat Recipe

  • Yields: 2 servings
  • Prep time: 5 minutes
  • Cook time: 5-7 minutes

Ingredients:

  • 2 cups sweet corn (fresh or frozen)
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped tomato 
  • 2 tablespoons finely chopped fresh coriander leaves (cilantro)
  • 1-2 green chilies, finely chopped (adjust to your spice preference)
  • 1/2 teaspoon NUVI's Chaat Masala
  • 1/4 teaspoon NUVI's Red Chili Powder 
  • 1/4 teaspoon black salt (kala namak)
  • A pinch of roasted cumin powder (optional, but highly recommended!)
  • Juice of 1/2-1 lime, or to taste
  • 1 tablespoon butter or oil (optional, for sautéing corn)
  • Salt to taste

Optional Garnishes:

  • Sev (crispy chickpea noodles)
  • Crushed potato chips or namkeen
  • Pomegranate seeds for a pop of color and sweetness

Instructions:

Prepare the Corn:

If using fresh corn on the cob: Boil water in a large pot. Add the corn cobs and cook for 5-7 minutes until tender. Let cool slightly, then carefully slice off the kernels.

If using frozen corn kernels: You can either boil them in water for 3-4 minutes, or microwave them according to package instructions until heated through.

For added flavour (optional): In a pan, heat 1 tablespoon of butter or oil. Add the sautéed corn kernels and sauté on medium heat for 2-3 minutes until lightly roasted. This provides a beautiful nutty flavour.

Mix Ingredients: In a big mixing bowl, put the cooked corn kernels.

Add Veggies & Herbs: To the corn, put in the finely chopped red onion, tomato, fresh coriander leaves, and chopped green chilies.

Season It Up: Add in the chaat masala, red chili powder, black salt, and roasted cumin powder (if using). Taste and add salt as needed.

The Zesty Finish: Squeeze in the fresh lime juice. Use half a lime to begin, adding more if you like it tangier.

Mix Well: Mix everything together gently until all the ingredients are well coated with the spices.

Serve & Garnish: Place the Masala Corn Chaat in serving bowls. Garnish with sev, broken chips, or pomegranate seeds if desired. Serve hot and relish the explosion of flavours!
